Bacon and Egg Salad Tomato Bites

If you're looking for a refreshing meal after all those Easter treats, but still want to use up some of your hard-boiled Easter Eggs, consider preparing egg salad bites!

Makes 8-12 Servings (depending on size of tomatoes)

• 4 hard-boiled eggs, chopped
• 3 ½ tbsp. mayonnaise
• ¼ tsp ground mustard spice
• ¼ tsp salt
• ¼ tsp black pepper
• 1 pckg cherry tomatoes; slice off tops and spoon out insides
• 3 strips of cooked bacon; crumbled for garnish
• 1 tsp paprika for garnish (optional)

1. In a large mixing bowl, chop up hard-boiled eggs into small pieces using a fork. Add mayonnaise, ground mustard, salt, and pepper to chopped eggs. Mix together well. Set aside.
2. Slice off the tops of the tomatoes and using a small spoon; scrape out the insides of the tomato. Fill each hollow tomato with egg salad mixture.
3. Top each bite with crumbled bacon and a dash of paprika. Serve.
