Veggie & Hard Boiled Egg Pasta Salad

If you're looking for a refreshing meal after all those Easter treats, but still want to use up some of your hard-boiled Easter Eggs, consider preparing pasta salad!

Makes 4-6 Servings

• 2 cups uncooked macaroni noodles
• 1 tbsp onion; diced (recommended sweet yellow or red)
• ½ cup bell peppers; diced (recommend: yellow and orange for color)
• 1 cup of cucumber; sliced and quartered
• 4 hard-boiled eggs; chopped
• 1 cups of mayonnaise
• 2 tsp sugar
• 1-2 tbsp fresh basil, chopped
• ½ tsp salt
• ½ tsp pepper
• 1 pinch of celery seed (optional)

1. Fill a large pot with water and cook macaroni according to package directions. Rinse and drain.
2. In a large bowl, combine onions, peppers, cucumbers, eggs, mayonnaise, sugar, parsley, salt, and pepper with cooked macaroni until mixed.
3. Refrigerate for 1 hour prior to serving.
